We love this Garlic, Ginger and Five-Spice Roasted Chicken for a number of reasons. 1) Deep slashes into the meat means the marinade has more surface area to do its magic. 2) These cuts also make for fastser cooking. 3) Lining a sheet pan with foil makes cleanup a breeze. 4) Salt on the foil absorbs dripping juices and fat, preventing smoking.
