Throwing it back to this delicious bowl - @eatbanza rotini with grilled asparagus and tomatoes in a vegan spicy avocado pesto sauce 😋 . Recipe for the pesto: In a food processor, combine 1/2 avocado, 1 clove garlic, 8-10 fresh basil leaves, 2 tbsp hemp seeds, 1 tsp lemon juice, 3 tbsp avocado oil, salt, pepper, and 1/2 tsp lemongrass sriracha for that spicy kick (not a fan of spice? Feel free to skip it). Pulse in the food processor until it creates a nice pesto sauce. Enjoy!

Happy Thursday! I started today off with a killer workout followed by this delicious brunch salad - avocado, red onion, roasted sweet potato and mushrooms, turkey sausage, and a soft boiled pasture raised egg all over arugula tossed in lemon juice, EVOO, salt, and pepper.
