Mac Attack! Vegan Chili Mac: 3rd time testing this recipe from @susanffvk and finally nailed it. Upped the #plantbasednutrition with Chickpea Pasta from @wholefoods Boil 6oz pasta according to package directions. While the pasta water is warming, make the "Chili" sauce: Saute 1 onion in 1 tbsp chili powder and 1/4 tsp chipotle flakes Add 1 (28-oz) can fire-roasted tomatoes, 1 1/2 cups water. Bring to boil, reduce to simmer. Simmer 15 minutes. When pasta is ready, drain and combine with the chili sauce, 1 can kidney beans, 1 cup frozen corn, and 1/4 cup @nowfoodsofficial nutritional yeast. Season with salt to taste.
