In case you're wondering what dessert I'll be bringing to every summer cookout I attend this year, here it is = Chocolate Chip Icebox Cake made with 3 simple ingredients!! 🍪🍫🍰 . If you're unfamiliar with icebox cake, it's basically a chilled layered cake with cookies and whipped topping. If an ice cream cake and a cookie cake had a baby, it would be an icebox cake. 🎂👶🏼 As someone who loves both ice cream cake and cookie cake, icebox cakes are my jam!🍦+ 🍪= 🎂 . Like I mentioned, this cake is SO simple to put together. Plus, it’s #glutenfree #dairyfree and #vegan. Here's the recipe: . • 2 boxes @simplemills Crunchy Chocolate Chip Cookies (save 2 cookies for topping) • 9 oz (about 3 cups) dairy-free coconut whipped topping • 1/4 cup dairy-free chocolate chips . Instructions 1️⃣Place a single layer of chocolate chip cookies into the base of an 8-inch springform pan. 2️⃣Spread 1 1/2 cups of whipped topping over cookies. Add another layer of cookies and spread on remaining whipped topping. Reserve two cookies and crush them. 3️⃣Sprinkle chocolate chips and cookie crumbs on top. 4️⃣Cover loosely with plastic wrap and chill in the refrigerator for at least 6 hours or up to overnight. Carefully remove from your springform pan and serve. Cake can be made 1 day in advance. . Baked oatmeal is the BEST make ahead breakfast! This oatmeal bake has bananas, strawberries and chocolate. Healthy pasta salad... perfect for all your cookouts/parties this summer. 🍝 🥗 I grew up loving summer cookouts with my family and I adore making healthy versions of the classic dishes my mom used to make and this is one of them. 🙌 I’m using a higher protein gluten-free pasta combined with cucumbers, tomatoes, red onion and a basil balsamic dressing. It’s such a crowd pleaser. Grab the link for the recipe in my bio!
Snack time = peanut butter chocolate protein bars aka a copycat recipe for one of my fave @rxbars! . Here’s how to make them: . • 10 pitted medjool dates • 1/2 cup peanuts • 1/2 cup egg white protein powder • 2 Tablespoons cocoa powder • 1/4 teaspoon sea salt (if peanuts are salted, leave this out) • 1–3 Tablespoons of water (if needed) • 2 Tablespoons dark chocolate chunks or chips Instructions 1. Line a loaf pan with parchment paper. Add dates, peanuts, protein powder, cocoa powder and sea salt into the base of your food processor. Process until everything is combined and peanuts are broken down into tiny bits. 2. At this point the mixture might be sticking together well and forming a ball of dough. If so, great! If not, it may be dry and not really sticking together (it will depend on how moist your dates were). If this is the case you’ll want to add a little water. Add 1 Tablespoon, run the food processor and see if the mixture starts holding together. If not, add another tablespoon and blend again. You’ll likely only need to add 1-3 Tablespoons of water. 3. Once the mixture is holding together, transfer into the loaf pan lined with parchment. Fold the parchment over top and press the mixture evenly into the pan. Once even, add chocolate chunks and press those into the top of the mixture as well. 4. Place the mixture in the fridge to harden up (about 30 mins to 1 hour) before removing from pan and cutting into 5 bars. 5. Store bars in fridge for up to 1 week. Enjoy cold or at room temperature.
HEALTHY potato salad... it's a thing! 🥔 🥗 Regular ol' potatoes get a bad rap, but they’re actually loaded with nutrients like potassium, vitamin B6, vitamin C, and fiber. 💁🏻♀️ Plus, they're high in resistant starch (especially when cooked and cooled like in this salad) which can promote satiety, better insulin sensitivity and better digestion. (source: @precisionnutirition) . Okay, so now that we're cool with regular potatoes, let's make this salad. Instead of mayo and eggs we're using a red wine vinegar dressing, sun-dried tomatoes, shallots and spinach to create a flavorful potato salad that everyone will LOVE! 💯 . Dinner: leftover spinach feta turkey burger with baked sweet potato fries and orzo salad (all the recipes are up) Dessert (not pictured): a whole container of blueberries + another strawberry protein muffin .
