COMFORTING BLACK BEAN CHILLI 🌶 so I am going to trial out sharing more recipes directly on my feed so you don’t “have” to go to the blog to get it. Will it help you? — 👉 Serves 4 for roughly £5 ready in 25 mins! — 🛒 Ingredients: ▪️2 tbsp olive oil ▪️3 garlic cloves, crushed ▪️1 red onion, diced ▪️1/2 tsp cayenne pepper + coriander + cinnamon ▪️1 tsp paprika ▪️1 red chilli, deseeded and sliced ▪️2 large carrots, grated ▪️680g passata ▪️2 tbsp tomato puree ▪️2x400g cans of black beans ▪️1x400g can of kidney beans ▪️1 tbsp cacao powder (optional) ▪️200ml veg stock ▪️Serve with brown rice or Roasted Sweet Potato (roast for 45-60 mins) — 1️⃣Start by grating the carrot, dicing the red onion and fresh chilli 2️⃣Heat a large pot on a medium heat adding the olive oil and garlic until sizzling 3️⃣Add the onion and all the spices along with a pinch of salt and pepper and stir 4️⃣Now add the grated carrots and chopped chilli and cook down for 2-3 minutes until soft 5️⃣Add the passata, tomato puree, beans, cacao powder and stock and stir 6️⃣Bring to a boil and then reduce to a low/medium heat to cook for 15 minutes (making sure to stir every 5 minutes)
I have just done a private cooking lesson with Eddie Howe (Bournemouth’s football manager) ⚽️ and his wife and kids! It was such great fun, we made the banana bread and peanut butter curry from the blog. I absolutely love inspiring people in the kitchen to show how quick and easy healthy cooking can be 🙌 If you told me 8 years ago when I was bed bound that I would be doing things like this I just wouldn’t have believed you! It just shows if you have a passion for something then put it out there, be honest, genuine and people will relate to that passion 🥰

Sharing the 4 things that helped my recovery with M.E/CFS 🎥 8 years ago I suddenly fell ill out of the blue, my whole life completely changed. I went from being very active to bed bound for 2 years then house bound for the next 3-4 years. I then turned my tough recovery journey into a passion which was cooking and helping others and decided to share my journey by opening up my blog Healthy Living James 2 years ago.
