First magazine cover 🤪 what a great day!!! I have been on my first magazine cover, done my first ever panel talk AND my 2nd ever cooking demo @fitfestoxford where I cooked my Mushroom Stroganoff & Peanut Butter Cookies 🍪 I’m such an introvert so public speaking is my biggest fear BUT nothing feels better than facing your fears head on 🙌 Announcing my next big cooking demo in London soon!
Crispy Cauliflower Dhal 🤤 a little eBook update to share! It’s getting very close now, the design is nearly there and then onto the final touches ready for selling! I have put so much work into this and seeing it all come together is so rewarding. All the recipes taste incredible and are sooooo easy to make including this dhal which is one of my favs! “Cheesy” Vegan Baked Gnocchi 😍(full recipe below) this recipe is so easy to make and super tasty. It’s a previous collaboration with @violife_foods but it’s too good not to share again. Trust me give this a try, you’ll fall in love! — 👉 Serves 4 in 40 mins — INGREDIENTS ▪️2 Tbsp Olive oil ▪️1 red onion finely diced ▪️2 garlic cloves crushed ▪️200g plum tomatoes sliced into quarters ▪️3 heaped Tbsp chopped black olives ▪️2 heaped Tbsp capers ▪️690g jarred passata ▪️2 handfuls spinach ▪️1 handful fresh basil chopped ▪️1 handful fresh parsley chopped ▪️1/2 juice lemon ▪️500g gluten free gnocchi ▪️200g Violife Creamy Original ▪️50g Violife Prosociano Wedge — 1️⃣ Preheat your oven to 200C with your oven dish inside 2️⃣ Firstly make the sauce by adding around 2 tbsp olive oil to a pan with the onion, garlic, chopped tomatoes, olives, capers and a pinch of salt and pepper to cook down for 5 minutes 3️⃣ Add the passata, stir and simmer for about 5 minutes 4️⃣ Meanwhile add the gnocchi to a large bowl and cover with boiling water 5️⃣Add the spinach, basil, parsley and lemon juice to the sauce and stir until the spinach has wilted 6️⃣ Drain the gnocchi and add straight to the tomato sauce and mix 7️⃣ Pour the Gnocchi sauce into the heated oven dish. Top with the Creamy Violife (sliced) and grated Prosociano and place in the oven at 200C for 20 minutes

Chocolate Almond & Coconut Balls 🍫🥥 (full recipe below 👇) using just 5 ingredients and also gluten free, vegan and refined sugar free! Give them a try this weekend 👌 — 👉 Serves 8 balls — INGREDIENTS ▪️70g desiccated coconut ▪️70g ground almonds ▪️2 tbsp coconut oil melted ▪️2 tbsp maple syrup INGREDIENT FOR THE CHOCOLATE: ▪️2 tbsp coconut oil melted ▪️2 tbsp maple syrup ▪️12.5g cacao powder ▪️Small pinch of salt — 1️⃣ To a mixing bowl add the desiccated coconut and ground almonds and mix together 2️⃣ Now add the melted coconut oil and maple syrup and mix throughly 3️⃣ With your hands simply roll the mix into even size balls and place on a small baking tray lined with baking paper (making sure the tray will fit into your freezer) 4️⃣ Place the balls into the freezer for 8 minutes whilst you make the chocolate sauce 5️⃣To a Bain Marie add the melted coconut oil, maple syrup and salt and mix 6️⃣ Slowly add the cacao powder whisking it into the sauce until smooth 7️⃣ Remove the balls from the freezer and simply evenly coat each with the chocolate sauce before placing back onto the tray and placing in the freezer for 20 minutes NOTES 👉 These will last in a sealed container in the fridge for up to a week so you don’t have to eat them all at once!
