This is pretty much how I have been starting every day here on vacation. Lots of greens and liquids! For some reason I always find it so easy to eat well on vacation, it must be all the fresh produce we don’t have during Canadian winters! But I’m feeling quite inspired by all the delicious flavours and colours to get back in the kitchen once I’m home!
Still obsessed with this breakfast... is anyone else totally happy eating the same thing every morning?
Whatever you’re celebrating today (for me it’s my dogs third birthday 🙂) I thought I’d share this recipe again! Enjoy! Ingredients 1/2 cup (heaping) of cashew butter 1/4 cup of coconut oil (melted) 1/4 cup of maple syrup 1 tsp of vanilla bean paste 2 1/2 cups of almond flour 1/2 tsp sea salt 1/2 cup (or more) @enjoylifefoods chocolate chips 1. Mix all dry wet ingredients in a bowl until incorporated. 2. Mix in the remaining ingredients, placing mixture in lined 8x8 inch baking dish 3. Place dough in freezer for 1 hour 4. Cut into 25 (ish) squares and eat! OR dip in melted chocolate and sprinkle with Maldon sea salt 5. Store in freezer, but let warm up for 5 mins before eating :) or eat right off the spoon!

Starting off the day with homemade raspberry jam and peanut butter on GF toast before a yoga class! It’s going to be a great Sunday! How are you spending the day??
This is definitely an ‘everything but the kitchen sink’ salad. I love grabbing all the leftover produce in my fridge at the end of the week and making a big salad filled with all the micronutrients before starting all over again at the grocery store for the next week!

Recreated one of my favourite breakfasts, but vegan and gluten free. Cashew “goat cheese” with tomatoes and basil on homemade bread 😊 pretty good start to the day!
There is seriously nothing better than pesto pasta 💚 here’s my recipe Blend all ingredients until smooth: 1/2 avocado 1 bunch of basil Handful of spinach 1/3 cup of cashew 2 tbsp olive oil Juice of 1 lemon 1 garlic clove 1 tbsp nutritional yeast Salt/pepper Water as needed I mixed my pasta with the pesto and tomatoes, but you could also put some more spinach in! That would be good!
This is my go to cold cure 👆👆let’s hope it works today!! Ingredients: kale, spinach, carrot, celery, parsley, lemon, ginger and turmeric
