There have been 74,000 fires in the Brazilian Amazon since the beginning of this year - a staggering 84% increase over the same period last year (National Institute for Space Research, Brazil). - Scientists and conservationists attribute the accelerating deforestation to President Jair Bolsonaro, who issued an open invitation to loggers and farmers to clear the land after taking office in January. The largest rainforest in the world is a critical piece of the global climate solution. Without the Amazon, we cannot keep the Earth’s warming in check. The Amazon needs more than our prayers. So what can YOU do?! - - - - - - - - - - - - - - 1. As an emergency response, donate to frontline Amazon groups working to defend the forest. Consider becoming a regular supporter of the Rainforest Alliance’s community forestry initiatives across the world’s most vulnerable tropical forests, including the Amazon; this approach is by far the most effective defense against deforestation and natural forest fires, but it requires deep, long-term collaboration between the communities and the public and private sectors. Be a conscious consumer, taking care to support companies committed to responsible supply chains. Eliminate or reduce consumption of beef; cattle ranching is one of the primary drivers of Amazon deforestation. - 5. Meet our Executive Chef Toshihiro Nagano (a.k.a. Chef Moto: @moto4fish ) . Moto was born the same year as the Apollo 11 spacecraft landed on the moon in Nojima island, Yokohama - a Japanese fishing village where the local seaweed has long been famous. Moto received extensive hands-on training in fishing and cooking by local fishermen during his childhood, which instilled in him a passion for cooking and seafood. At the age of 15, Moto started to work at a sushi restaurant in Yokohama. His passion for seafood continued to grow - He soon moved to the United States, where he continued to hone his sophisticated chef work and took things to the next level by working as a sushi chef for over 10 years in San Francisco. From 2004 to 2009, Moto trained in French/Japanese cuisine with Chef Wakabayashi at his Michelin-starred restaurant SF Bushitei as a sous chef. In 2010, Moto opened SKOOL SF together with his business partner Andy Mirabell. Using a variety of Japanese ingredients as authentic and instrumental parts of the cooking process, respecting the Japanese nobility of traditional techniques and sensibilities, and cooking without borders-- Moto holds these mottos and philosophies in his mind, surrounded by his beloved kitchen tools, and with his wife Hiroko at his side; Together they have a mission to work hard at creating modern (even their old work still look modern!) and playful dishes for people to savor and enjoy. . . . #SkoolRestaurant
