July 7th is a "Star Festival" called #TANABATA in Japan. . We usually write wishes on a small piece of paper, hang on Bamboo tree and gaze stars on that day . . << SKOOL LESSON >> . . Tanabata story in Japan is thought to be inspired by the two stars Vega and Altair since those two stars look very bright on each side of Milky Way. Here is a story about Altair (Hikoboshi) and Vega (Orihime). Once upon a time, a god had a daughter named Orihime. Since she was very hard working but didn’t have a partner, the god decided to find a good boy for her. The god found a boy named Hikoboshi who was also nice and hardworking and introduced him to Orihime. Hikoboshi and Orihime fell in love and they got married. After the marriage, they really enjoyed being together. But at the same time, they forgot about work. Looking at this, the god got very angry and he separated them with a huge river called Amanogawa. After that, both Hikoboshi and Orihime were so sad that they couldn’t even work but cried and cried every single day. The god felt very sorry to look at them, so he decided that they could meet only once a year, on Tanabata. So Tanabata is the only meeting day for the couple –sad but kind of romantic. It’s Okinawa Soba Pop-up Thursday, and we have another lesson about this traditional Okinawan food - "Rafute (Braised Pork Belly)"- which comes with our Okinawa Soba for you! . << Skool Lesson >> . What is “RAFUTE”? → RAFUTE is Okinawan braised Pork Belly, slowly simmered with brown sugar, #Awamori liquor, Soy Sauce and #katsuo #dashi for 2~4 hrs. Normally serves with rice or on top of Okinawa Soba. . → How is Skool RAFUTE prepared? We follow basics rules to keep it authentic, but instead of Awamori liquor, we use Sweet Potato #SHOCHU liquor and longer cooking process - slow cook for "24 hours" - which leaves this 5 oz thick meat more meltingly soft, while the skin gelatinous and slippery. . . It has the smooth, a bit chewy/ sticky texture similar to #gomadofu a traditional Kyoto cuisine. . How do you serve Jimami-Dofu at Skool? . → We serve our Jimami-Dofu with housemade seasoned Soy Sauce and fresh #wasabi . . A bottle of #awamori (a traditional alcoholic drink from Okinawa) infused with small hot chili peppers called #shimatogarashi (lit: "island chilis") from Okinawa . Are those KOREGUSU on pict Housemade? . → YES! Hiroko (@madaraneko1122) has prepped our #koregusu a month ago. Instead of Awamori liquor, she used sweet potato #shochu and local #Thaichilis. She also made Extra-Spicy version with Habanero🔥 . How do you use KOREGUSU? . → Koregusu is often used to season any food in Okinawa. Most commonly, it is sprinkled on Okinawa soba. WHAT IS “OKINAWA”? → Okinawa is a Japanese prefecture consisting of 150 islands in the East Chinese Sea between Taiwan and Japan’s mainland, in the southwestern part of Japan . . WHAT IS “OKINAWA-STYLE RAMEN”? → A type of Noodle Soup produced in Okinawa. It is officially called “OKINAWA SOBA” although it is different from buckwheat noodles known as #SOBA in the rest of Japan. The noodles resemble #UDON and are made of wheat . → Okinawa Soba is served in a broth flavored with #kombu , #katsuobushi (bonito flakes) and pork . → Standard toppings are sliced #negi (scallion), braised pork belly and #benishoga (pickled ginger) . → For extra spice, add few drops of #KOREGUSU (red chile pepper) soaked in #awamori liquor . . WHY IT IS CALLED “SOBA”, NOT RAMEN? → Good question!! Ramen was originally called “Chuka Soba” (Chinese Style Noodle Soup). In Japan the word RAMEN become a popular term around 1960.
